    [ES] El desperdicio de alimentos es un problema generalizado que afecta a varias etapas de la cadena de distribución de alimentos. En particular, el desperdicio de alimentos doméstico representa una parte significativa del desperdicio de alimentos a nivel mundial, ya que las familias desechan anualmente grandes cantidades de alimentos que podrían haber sido consumidos. Los hogares pueden ahorrar dinero y contribuir a la reducción de desperdicios mejorando sus prácticas de gestión de inventario de alimentos y compras de comestibles. Con la adopción generalizada de teléfonos inteligentes, casi todos tienen acceso a una variedad de aplicaciones de gestión de inventario de cocina (KIMAs, por sus siglas en inglés). Estas aplicaciones permiten a los usuarios administrar su inventario de alimentos, además de hacer seguimiento a las fechas de vencimiento, las fechas de compra y el uso, lo que facilita y vuelve más eficaz la reducción del desperdicio de alimentos en el hogar. Aunque estas aplicaciones ofrecen numerosos beneficios, todavía hay margen para la mejora. La industria debe mejorar la interfaz de usuario y las capacidades de estas aplicaciones para atraer y retener a más usuarios, permitiendo así que más hogares aprovechen estas tecnologías y se conviertan en participantes activos en los esfuerzos de reducción del desperdicio de alimentos. El objetivo principal de esta tesis es investigar el potencial de la inteligencia artificial (IA) para mejorar una aplicación de gestión de inventario de cocina, con un enfoque en la facilidad de uso y, lo más importante, en la eficiente recuperación de información de datos de alimentos. Para lograr este objetivo, se explorarán y evaluarán diversas tecnologías impulsadas por IA y aprendizaje automático, con el propósito de desarrollar e implementar una KIMA que minimice el tiempo requerido por los usuarios para ingresar datos de alimentos en la aplicación. Empleando tecnologías de AI como el Reconocimiento Óptico de Caracteres o el Procesamiento del Lenguaje Natural, las aplicaciones de gestión de inventario de cocina pueden mejorar significativamente sus interfaces de usuario y funcionalidad. Esto atraería a más usuarios fieles y daría a los hogares la oportunidad de participar activamente en reducir el desperdicio de alimentos, contribuyendo así a un futuro más ecológico y eficiente. [EN] Food waste is a pervasive problem that impacts various stages of the food distribution chain. Domestic food waste represents a significant portion of global food waste, as families discard substantial amounts of food annually that could have otherwise been consumed. Households can save money and contribute to waste reduction by improving their food inventory and grocery management practices. With the widespread adoption of smartphones, nearly everyone has access to a range of Kitchen Inventory Management Apps (KIMAs). These apps enable users to manage their food and grocery inventory while keeping track of expiration dates, purchase dates, and usage, thereby making the reduction of household food waste more manageable and effective. Although these apps provide numerous benefits, there remains ample opportunity for improvement. The industry must enhance these apps' user interface and capabilities to attract and retain more users, empowering more households to leverage these technologies and participate actively in food waste reduction efforts. The primary objective of this thesis is to investigate the potential of Artificial Intelligence (AI) for enhancing a kitchen inventory management app, focusing on ease of use and, most importantly, efficient food data information retrieval. To achieve this goal, various AI and Machine Learning-powered technologies will be explored and evaluated, aiming to develop and implement a KIMA that minimises the time required for users to input food data into the application. By harnessing the potential of AI technologies like Optical Character Recognition and Natural Language Processing, kitchen inventory management apps can significantly improve their user interface and capabilities. This would attract and retain more users and empower households to actively participate in reducing food waste and making more sustainable consumption choices, contributing to a greener and more efficient future.

La plataforma basada en IA permite a los educadores subir clases en línea o vídeos educativos, que luego se transcriben automáticamente. Los usuarios también pueden hacer preguntas relacionadas con las transcripciones y recibir respuestas con la marca de tiempo en la que se da la explicación. Además, el sistema ofrece una interfaz de programación de aplicaciones (API) para facilitar a los centros educativos la implementación de la aplicación. La tesis pretende demostrar cómo la inteligencia artificial puede mejorar la calidad de la educación y reducir costes utilizando tecnología de código abierto. [EN] This thesis explores the potential of artificial intelligence in education by creating an application that transcribes videos and answers questions related to the videos using open-source models. The AI-based platform allows educators to upload online classes or educational videos, which are then automatically transcribed. Users can also ask questions related to the transcriptions and receive answers with the timestamp where the explanation is given. Additionally, the system offers an application programming interface (API) to make it easier for educational institutions to implement the application. The thesis aims to demonstrate how artificial intelligence can enhance the quality of education and reduce costs by utilizing open-source technology.

    Entre os primeiros desenhos para a construção do palácio de Carlos V na Alhambra, conserva-se um importante esboço anónimo na Real Biblioteca de Madrid, que representa o edifício mais algumas praças com arcadas. O processo de desenho e aspetos técnicos, como escala e dimensões, foram pouco estudados e são aqui analisados. Para isso, consultou-se e digitalizou-se o esboço, transcrevendo-se pela primeira vez os seus traçados incisos. A sua análise revela a génese da planta, evidenciando significativas intenções de desenho. Também foram estudadas as suas cotas, proporções e a concordância com o que foi construído, fornecendo novos indícios sobre a sua finalidade e datação. Tudo isso permite afirmar que estamos perante o primeiro plano de obra conhecido do edifício, que determinou a sua forma e dimensões definitivas. Trata-se de um documento com valor patrimonial próprio, imprescindível para entender e conservar um palácio incluído na Lista de Património Mundial da UNESCO. Entre los primeros dibujos para la construcción del palacio de Carlos V en la Alhambra se conserva una importante traza anónima en la Real Biblioteca de Madrid, que representa el edificio más unas plazas porticadas. Se ha estudiado poco su proceso de dibujo y aspectos técnicos como su escala y dimensiones, aquí analizados. Para ello se ha consultado y digitalizado la traza, transcribiéndose por primera vez sus trazados incisos. Su análisis revela la génesis de la planta, evidenciando significativas intenciones de diseño. También se estudian sus cotas, proporciones y la concordancia con lo construido, aportándose nuevos indicios sobre su finalidad y datación. Todo ello permite afirmar que estamos ante el primer plano de obra conocido del edificio, que determinó su forma y dimensiones definitivas. Se trata de un documento con valor patrimonial propio, imprescindible para entender y conservar un palacio incluido en la Lista de Patrimonio Mundial de la UNESCO. Among the first drawings of the construction of the Palace of Charles V in the Alhambra, a remarkable anonymous trace is preserved at the Royal Library in Madrid illustrating the edifice and various arcaded squares. The drawing process of this document, together with technical aspects such as its scale and dimensions have been analyzed in the present work. To this aim, the trace has been researched, digitalized, and its incised lines transcribed for the first time. Its analysis unveils the original floor plan, revealing significant and primordial design intentions. The plan dimensions, proportions and consistency with the final construction provides new evidence on its purpose and dating. All this confirms this piece to be the first architectural drawing known of the building, dictating its definite shape and dimensions. A document with its own heritage value, essential to understand and preserve a palace part of UNESCO World Heritage List.

    Purpose This paper aims to study possible differences between the Outstanding Universal Value (OUV) defined in the designation of Cuenca as a World Heritage (WH) site and its inhabitants' perceptions of heritage value. The study is based on research conducted in the historic centre of Cuenca in Ecuador, which was accorded WH status in 1999. Design/methodology/approach The research employs both quantitative and qualitative methodologies, providing a complementary approach to the research subject. Quantitative research involved a probability survey of 400 informants randomly selected from the population of the canton of Cuenca, while qualitative research included 40 semi-structured interviews with residents and traders in the historic centre and 150 further written consultations with residents of the city.

    The permanent exhibition space created in the Faculty of Pharmacy in the University of Seville (Spain) operates as a teaching and research centre. All pieces in the collection are inventoried and displayed in a permanent, coherent and orderly exhibition that serves as an educational tool for all walks of life. This article explains how the pieces are managed, as well as the advantages and disadvantages of creating and disseminating a historical-scientific collection in a field as specific as a university. We also explore the contrast between the concepts of “conservation” and “new technologies” that are so often unthinkingly bundled together in historical collections today.

    The use of Operational Modal Analysis is establishing as an acceptable tool for the update of numerical models. Through its application, mechanical properties of structural elements, as stiffness or mass, can be obtained with great accuracy. The analysis of the current structural state of the Monastery of San Jerónimo, an important piece of heritage located in Seville (Spain), is presented in this paper. The monastery dates from the XV century. The cloister has been analysed by OMA in order to update a FE model, to subsequently carry out the structural assessment of the Monastery.

    After the French invasion and the disentailment of ecclesiastical property in Spain in the 19th century, the monastery of San Jerónimo de Buenavista in Seville fell victim to neglect, looting and ruin. Archaeological prospections begun in 1988 yielded evidence of the foundations and some of the paving of the lost areas, but the parts of the monastery’s church that are still standing today have barely received any attention beyond establishing certain spatial relationships with the underlying remains. To examine the construction and spatial characteristics of the building, we developed a digital model based on a photogrammetric survey, a stratigraphic interpretation of traces, a spatial analysis based on the geometric systems of formal control that were used at the time, and the identification of typological references. The aim of these overlapping approaches was to obtain the most objective understanding possible.

    Cultures in Mediterranean climate zones (MCZs) around the world have long been reliant on groundwater and springs as freshwater sources. While their ecology and cultural sustainability are recognized as critically important, inter-relationships between springs and culture in MCZs has received little attention. Here we augmented a global literature review with case studies in MCZ cultural landscapes to examine the intensity of cultural and socio-economic impacts on springs ecohydrogeology. MCZs are often oriented on the west and southern coasts in tectonically active landscapes, which control aquifer structure, the prevalence of westerly winds, and aridity, and generally expose associated habitats to harsh, afternoon sunlight. Cultural appreciation and appropriation of springs ranges widely, from their use as subsitence supplies to profound traditions, such as Greco-Roman nymphs, and Asian and Abrahamic spiritual cleansing and baptism. Commoditization of water resources for agriculture, industry (e.g., mining, water bottling, geothermal resorts), and urban needs is placing ever-increasing, non-sustainable demands on aquifers and springs. When economic values approach or exceed cultural values, these irreplaceable aquatic resources are degraded and lost. Sustainable stewardship of springs and the aquifers that support them are a little-recognized, but central conservation challenge for modern society facing global climate changes.

    Intellectual property (IP) management has posed continuous problems in the digital world, so understanding its associated concepts and the particularities they present is crucial. Within artificial intelligence (AI), machine learning (ML) and natural language processing (NLP) have enabled the intelligent processing and analysis of large volumes of data, making them widely used tools. In order to help fill the research gap that exists due to the novelty of the concepts, a bibliometric analysis is proposed of 404 scientific documents linked to AI, ML, NLP and IP, extracted from the Web of Science (WoS) core collection repository. The results demonstrate a current trend in research on the management of IP, related to digital tools and highlight the issues that arise from the management of IP stemming from their use. This research also identifies how these tools have been used to facilitate the management and identification of IP. In this sense, this study brings originality to the field of intellectual property management by examining previous studies and proposing new avenues for future research, thus broadening the current understanding of the subject. Entrepreneurs and business leaders can benefit from this study as it uncovers the complexities of IP management and thus enhances understanding of the opportunities and challenges in the AI era

    [eng] The aim of this dissertation is to provide a theoretical framework where the double significance of Disability Justice artistic practices aesthetic and political can be accounted for , and to show the emancipatory and coalitional potential of DJ as a place for collective liberation that interlaces social justice movements in solidarity and care bonds . To do so, the thesis elaborates on the intersections between Pragmatist politics and ethics, and the artistic practices that are flourishing in the discipline of Access Art, which constitutes a central territory of activism for Disability Justice. This c onnection revolves around a recovery of embodiment, which is paradigmatically exemplified by an attention to the sense of touch. Therefore, three steps are performed . In the first one, we undertake an archaeology of touch which shows how Western philosophy has been shaped by an Ocularcentric conception of knowledge and culture that has led to a tactile amnesia which is used to reinforce ableist structures that leave n on visual learners behind in many territories, and emphatically in museums. From this, we argue that paying attention to embodiment and touch constitutes a shift of standpoint with deep philosophical implications, which entails restructuring the sensory regimes ordering how we inhabit the world. Secondly, the ten Disability Justice principles are presented as the guiding regulations that establish how this reordering of the world is performed in Access Art practices. The function of each principle is examined in relation to precedent theoretical frameworks that come from Feminist Pragmatism and Critical Theory’s ideas of community, interdependence and care. Thirdly, a series of case studies built around the key work of Car men Papalia in Access Arts are narrated to show how different practitioners deploy reorganizational tactics that aim at transformative justice actions by way of revolting everyday ways of sensing, saliently redirecting our attention to the broad senses of touch. This thesis is framed in a broader project arguing that building bridges between the principles of Disability Justice and the tenets of critical Pragmatist theoretical frameworks provides a bidirectional enrichment for both fields: for Disability Justice a ctivists and artists, existing frameworks provide a tradition in relation to which they can make sense of their praxis; and for the Pragmatist scholars, it enlivens the discipline by proving it useful to analyze and take charge of current oppressions, as w ell as affording a new standpoint from which new aspects become salient when we revisit classical texts. En particular, el desperdicio de alimentos doméstico representa una parte significativa del desperdicio de alimentos a nivel mundial, ya que las familias desechan anualmente grandes cantidades de alimentos que podrían haber sido consumidos. Los hogares pueden ahorrar dinero y contribuir a la reducción de desperdicios mejorando sus prácticas de gestión de inventario de alimentos y compras de comestibles. Con la adopción generalizada de teléfonos inteligentes, casi todos tienen acceso a una variedad de aplicaciones de gestión de inventario de cocina (KIMAs, por sus siglas en inglés). Estas aplicaciones permiten a los usuarios administrar su inventario de alimentos, además de hacer seguimiento a las fechas de vencimiento, las fechas de compra y el uso, lo que facilita y vuelve más eficaz la reducción del desperdicio de alimentos en el hogar. Aunque estas aplicaciones ofrecen numerosos beneficios, todavía hay margen para la mejora. La industria debe mejorar la interfaz de usuario y las capacidades de estas aplicaciones para atraer y retener a más usuarios, permitiendo así que más hogares aprovechen estas tecnologías y se conviertan en participantes activos en los esfuerzos de reducción del desperdicio de alimentos. El objetivo principal de esta tesis es investigar el potencial de la inteligencia artificial (IA) para mejorar una aplicación de gestión de inventario de cocina, con un enfoque en la facilidad de uso y, lo más importante, en la eficiente recuperación de información de datos de alimentos. Para lograr este objetivo, se explorarán y evaluarán diversas tecnologías impulsadas por IA y aprendizaje automático, con el propósito de desarrollar e implementar una KIMA que minimice el tiempo requerido por los usuarios para ingresar datos de alimentos en la aplicación. Empleando tecnologías de AI como el Reconocimiento Óptico de Caracteres o el Procesamiento del Lenguaje Natural, las aplicaciones de gestión de inventario de cocina pueden mejorar significativamente sus interfaces de usuario y funcionalidad. [EN] Food waste is a pervasive problem that impacts various stages of the food distribution chain. Domestic food waste represents a significant portion of global food waste, as families discard substantial amounts of food annually that could have otherwise been consumed. Households can save money and contribute to waste reduction by improving their food inventory and grocery management practices. With the widespread adoption of smartphones, nearly everyone has access to a range of Kitchen Inventory Management Apps (KIMAs). These apps enable users to manage their food and grocery inventory while keeping track of expiration dates, purchase dates, and usage, thereby making the reduction of household food waste more manageable and effective. Although these apps provide numerous benefits, there remains ample opportunity for improvement. The industry must enhance these apps' user interface and capabilities to attract and retain more users, empowering more households to leverage these technologies and participate actively in food waste reduction efforts. The primary objective of this thesis is to investigate the potential of Artificial Intelligence (AI) for enhancing a kitchen inventory management app, focusing on ease of use and, most importantly, efficient food data information retrieval. To achieve this goal, various AI and Machine Learning-powered technologies will be explored and evaluated, aiming to develop and implement a KIMA that minimises the time required for users to input food data into the application. By harnessing the potential of AI technologies like Optical Character Recognition and Natural Language Processing, kitchen inventory management apps can significantly improve their user interface and capabilities. This would attract and retain more users and empower households to actively participate in reducing food waste and making more sustainable consumption choices, contributing to a greener and more efficient future.

Additionally, the system offers an application programming interface (API) to make it easier for educational institutions to implement the application. The thesis aims to demonstrate how artificial intelligence can enhance the quality of education and reduce costs by utilizing open-source technology.

    Entre os primeiros desenhos para a construção do palácio de Carlos V na Alhambra, conserva-se um importante esboço anónimo na Real Biblioteca de Madrid, que representa o edifício mais algumas praças com arcadas. O processo de desenho e aspetos técnicos, como escala e dimensões, foram pouco estudados e são aqui analisados. Para isso, consultou-se e digitalizou-se o esboço, transcrevendo-se pela primeira vez os seus traçados incisos. A sua análise revela a génese da planta, evidenciando significativas intenções de desenho. Também foram estudadas as suas cotas, proporções e a concordância com o que foi construído, fornecendo novos indícios sobre a sua finalidade e datação. Tudo isso permite afirmar que estamos perante o primeiro plano de obra conhecido do edifício, que determinou a sua forma e dimensões definitivas. Trata-se de um documento com valor patrimonial próprio, imprescindível para entender e conservar um palácio incluído na Lista de Património Mundial da UNESCO. Su análisis revela la génesis de la planta, evidenciando significativas intenciones de diseño. También se estudian sus cotas, proporciones y la concordancia con lo construido, aportándose nuevos indicios sobre su finalidad y datación. Todo ello permite afirmar que estamos ante el primer plano de obra conocido del edificio, que determinó su forma y dimensiones definitivas. Se trata de un documento con valor patrimonial propio, imprescindible para entender y conservar un palacio incluido en la Lista de Patrimonio Mundial de la UNESCO. Among the first drawings of the construction of the Palace of Charles V in the Alhambra, a remarkable anonymous trace is preserved at the Royal Library in Madrid illustrating the edifice and various arcaded squares. The drawing process of this document, together with technical aspects such as its scale and dimensions have been analyzed in the present work. To this aim, the trace has been researched, digitalized, and its incised lines transcribed for the first time. Its analysis unveils the original floor plan, revealing significant and primordial design intentions. The plan dimensions, proportions and consistency with the final construction provides new evidence on its purpose and dating. All this confirms this piece to be the first architectural drawing known of the building, dictating its definite shape and dimensions. A document with its own heritage value, essential to understand and preserve a palace part of UNESCO World Heritage List.

    Purpose This paper aims to study possible differences between the Outstanding Universal Value (OUV) defined in the designation of Cuenca as a World Heritage (WH) site and its inhabitants' perceptions of heritage value. The study is based on research conducted in the historic centre of Cuenca in Ecuador, which was accorded WH status in 1999. Design/methodology/approach The research employs both quantitative and qualitative methodologies, providing a complementary approach to the research subject. Quantitative research involved a probability survey of 400 informants randomly selected from the population of the canton of Cuenca, while qualitative research included 40 semi-structured interviews with residents and traders in the historic centre and 150 further written consultations with residents of the city.

    The permanent exhibition space created in the Faculty of Pharmacy in the University of Seville (Spain) operates as a teaching and research centre. All pieces in the collection are inventoried and displayed in a permanent, coherent and orderly exhibition that serves as an educational tool for all walks of life. This article explains how the pieces are managed, as well as the advantages and disadvantages of creating and disseminating a historical-scientific collection in a field as specific as a university. We also explore the contrast between the concepts of “conservation” and “new technologies” that are so often unthinkingly bundled together in historical collections today.

    The use of Operational Modal Analysis is establishing as an acceptable tool for the update of numerical models. Through its application, mechanical properties of structural elements, as stiffness or mass, can be obtained with great accuracy. The analysis of the current structural state of the Monastery of San Jerónimo, an important piece of heritage located in Seville (Spain), is presented in this paper. The monastery dates from the XV century. The cloister has been analysed by OMA in order to update a FE model, to subsequently carry out the structural assessment of the Monastery.

    After the French invasion and the disentailment of ecclesiastical property in Spain in the 19th century, the monastery of San Jerónimo de Buenavista in Seville fell victim to neglect, looting and ruin. Archaeological prospections begun in 1988 yielded evidence of the foundations and some of the paving of the lost areas, but the parts of the monastery’s church that are still standing today have barely received any attention beyond establishing certain spatial relationships with the underlying remains. To examine the construction and spatial characteristics of the building, we developed a digital model based on a photogrammetric survey, a stratigraphic interpretation of traces, a spatial analysis based on the geometric systems of formal control that were used at the time, and the identification of typological references. The aim of these overlapping approaches was to obtain the most objective understanding possible.

    Cultures in Mediterranean climate zones (MCZs) around the world have long been reliant on groundwater and springs as freshwater sources. While their ecology and cultural sustainability are recognized as critically important, inter-relationships between springs and culture in MCZs has received little attention. Here we augmented a global literature review with case studies in MCZ cultural landscapes to examine the intensity of cultural and socio-economic impacts on springs ecohydrogeology. MCZs are often oriented on the west and southern coasts in tectonically active landscapes, which control aquifer structure, the prevalence of westerly winds, and aridity, and generally expose associated habitats to harsh, afternoon sunlight. Cultural appreciation and appropriation of springs ranges widely, from their use as subsitence supplies to profound traditions, such as Greco-Roman nymphs, and Asian and Abrahamic spiritual cleansing and baptism. Commoditization of water resources for agriculture, industry (e.g., mining, water bottling, geothermal resorts), and urban needs is placing ever-increasing, non-sustainable demands on aquifers and springs. When economic values approach or exceed cultural values, these irreplaceable aquatic resources are degraded and lost. Sustainable stewardship of springs and the aquifers that support them are a little-recognized, but central conservation challenge for modern society facing global climate changes.

    Intellectual property (IP) management has posed continuous problems in the digital world, so understanding its associated concepts and the particularities they present is crucial. Within artificial intelligence (AI), machine learning (ML) and natural language processing (NLP) have enabled the intelligent processing and analysis of large volumes of data, making them widely used tools. In order to help fill the research gap that exists due to the novelty of the concepts, a bibliometric analysis is proposed of 404 scientific documents linked to AI, ML, NLP and IP, extracted from the Web of Science (WoS) core collection repository. The results demonstrate a current trend in research on the management of IP, related to digital tools and highlight the issues that arise from the management of IP stemming from their use. This research also identifies how these tools have been used to facilitate the management and identification of IP. In this sense, this study brings originality to the field of intellectual property management by examining previous studies and proposing new avenues for future research, thus broadening the current understanding of the subject. Entrepreneurs and business leaders can benefit from this study as it uncovers the complexities of IP management and thus enhances understanding of the opportunities and challenges in the AI era

    [eng] The aim of this dissertation is to provide a theoretical framework where the double significance of Disability Justice artistic practices aesthetic and political can be accounted for , and to show the emancipatory and coalitional potential of DJ as a place for collective liberation that interlaces social justice movements in solidarity and care bonds . To do so, the thesis elaborates on the intersections between Pragmatist politics and ethics, and the artistic practices that are flourishing in the discipline of Access Art, which constitutes a central territory of activism for Disability Justice. This c onnection revolves around a recovery of embodiment, which is paradigmatically exemplified by an attention to the sense of touch. Therefore, three steps are performed . In the first one, we undertake an archaeology of touch which shows how Western philosophy has been shaped by an Ocularcentric conception of knowledge and culture that has led to a tactile amnesia which is used to reinforce ableist structures that leave n on visual learners behind in many territories, and emphatically in museums. From this, we argue that paying attention to embodiment and touch constitutes a shift of standpoint with deep philosophical implications, which entails restructuring the sensory regimes ordering how we inhabit the world. Secondly, the ten Disability Justice principles are presented as the guiding regulations that establish how this reordering of the world is performed in Access Art practices. The function of each principle is examined in relation to precedent theoretical frameworks that come from Feminist Pragmatism and Critical Theory’s ideas of community, interdependence and care. Thirdly, a series of case studies built around the key work of Car men Papalia in Access Arts are narrated to show how different practitioners deploy reorganizational tactics that aim at transformative justice actions by way of revolting everyday ways of sensing, saliently redirecting our attention to the broad senses of touch. This thesis is framed in a broader project arguing that building bridges between the principles of Disability Justice and the tenets of critical Pragmatist theoretical frameworks provides a bidirectional enrichment for both fields: for Disability Justice a ctivists and artists, existing frameworks provide a tradition in relation to which they can make sense of their praxis; and for the Pragmatist scholars, it enlivens the discipline by proving it useful to analyze and take charge of current oppressions, as w ell as affording a new standpoint from which new aspects become salient when we revisit classical texts.
